What happened to showing comics by release dates? I used it all the time and now I can’t find the option anymore

That option is still available in the filters section.  That is also the default for users to the site, unless they've chosen a different default that they prefer.

Please change the sort order to "Release Date" in the "Sort & Filter" section on any comic set page.  For example:

https://www.pricecharting.com/console/comic-books-captain-america
